My post last week on Date Night outfits went through quite a lot of inspirational pins on pinterest. I want to make sure you can see exactly where I was coming from because if you haven't noticed, the most expensive item on my out fit were the 10K gold earrings I want from gilt.com. They are just under $100. I try really hard to keep spending at a minimum these days and only by trends for an inexpensive price, knowing damn well it won't be in my closet long...

This, my friends, was a quality day. Despite getting a lovely little Valentine's Day cold from my faux niece (who sneezed in my face), I was able to successfully manipulate a recipe to be completely dairy-free! It came our better than I imagined it would be.

Somehow, between walking the aisles of my local super market and reading the recipe on my phone, I missed that the recipe required a can of "cream of chicken soup". Which isn't something I can eat. Luckily, I'm fairly good at improvising. Being sick has never been ideal for me. I mean, it's not for anyone but I definitely lose my train of thought and interest a lot faster than normal. I skip important steps in task, etc. This one turned out for the better though.

The pictures taken are from today because I cooked until around 9pm last night trying to pack up my life for the week. It took so much longer due to the wheezing and huffing about throughout the day. Did I mention, I'm not a sick person?

Having a cold or, God forbid, the flu always makes me want comfort food. I was around cookies, cake, chocolate and everything butter related all weekend due to a two year old's birthday. Add Valentine's Day on top of that and you've got a double whammy. I couldn't indulge with my allergy so I decided to go all out and create an imitation cheese casserole. Here's the full recipe from my cold fighting heart to yours:

Serving Size: 4

1 Tbs olive oil
1 small onion (1 cup)
2 clove garlic
3/4 cauliflour rice (Trader Joe's has this pre-made)
1 cup cooked quinoa
1/2 can cream coconut (I used Trader Joe's)
1.5 cups chicken broth
2 cups broccoli florets
1 cup Daiya cheddar style shred (extra to sprinkle on top)

1) Place olive oil in the skillet and let heat. Add onion, garlic and raw chicken to the olive oil and cook on medium until chicken begins to brown.
2) Add cream coconut to the skillet and allow to melt. Mix in the cauliflour rice. Once mixed, add the quinoa and chicken broth. Add salt and pepper to taste. Allow to cook for about 5 minutes on medium to thicken and be absorbed by the quinoa and cauliflour.
3) Next, add the cup of cheez. Stir to melt. Add broccoli last and cook until broccoli softens. About 2-4 minutes should be perfect, especially to help the sauce thicken.
4) Lastly, I sprinkle a little later of the quinoa in top with some additional cheez. I also put it in the oven on broil un the top layer of cheez has melted and crisps up.

It's last Thursday night, I'm sitting cross legged on my bed staring aimlessly at my closet in complete disbelief that I don't have a single thing to wear for my first date in 2 years - Tomorrow. The amount of panic and frustration I feel with myself is completely overwhelming because I've realized that I've let myself slip somehow. I've not got an item in my closet that's sexy comfy. I've got classy gala, sunday bests, comfy cozy... I've got nothing but outfits for women and nothing what-so-ever to make a man look at me with a seductive eye.

Around 360 minutes is the amount of time I've spent researching, dissecting and archiving outfits specifically for Date Nights. If you follow me on pinterest, I'm sorry, you know I've been on a mission. Not only do I have a board but I've asked 4 of my girls friends and 1 guy friend their opinion on almost each outfit that was saved or pinned.

Exhaustion should be my number one feeling but intrigue has taken over. Different women have a completely unique outlook as to why something is sexy vs cute for date outfits. Men - well, they're on a whole other level. Let's be real here, I trust them but I mostly don't. Haha.

I found a consistent love with black. Black dresses, shoes and bags. Gold is my metal of choice. IT's a trend and I think it's a classy sexy rule to go by. I think I can build a mini-date night unit in my closet out of these.

This afternoon, while hunting for outfits I bought the dress above. I will review and make sure to let you know how it goes. I told you I was on a mission!

Spicy Zucchini Noodle Shrimp Scampi


You guys, I cooked!

I've been working a lot on my mental well being for the past month and I'm happy to say that I think the final 2015 blues are far away. It makes me joyous knowing I can say that with satisfaction and ease. In the mornings I see sunlight coming through the windows, flowers popping up outside and even though the air is cool it feels fresh and sweet. I can finally break away from my winter soup kick and move on to fresh warm meals for the Spring! Eeep!

Tonight's meal is brought to you by the letter S, for Spice! I went a little overboard today but I'm happy to announce that it still turned out delightful and, of course, dairy-free. This one is also gluten-free. I had Pad See Ew last night from our local Thai place and that was enough noodle to last til the end of the month! My roommate and I had a double trouble Harry Potter night with take out and dessert. We both regret nothing. We've been so active lately. Volleyball is over and we came in second for the championship. Not number 1 but we'll be ready for them next season... dum dum dum!

As for the Shrimp Scampi, zucchini is the substitute for noodles. As long as you don't over cook them they keep a terrific texture and soak up a lot of the spices and lemon. It also keeps the meal nice and light, not to mention clean.


Here's what I used:

2 tsp Earth Balance Butter
2 cloves Garlic
8-12 Shrimp (love shrimp)
1/8 tsp Red Pepper Flakes
1/8 tsp Oregano
1 medium Zucchini (Noodled)
1 Tbs Lemon Juice
A dash of Cayenne + Pepper to taste

Grab a wok or medium pan and melt your Earth Balance Butter on medium-high heat. Next add garlic and let simmer for a few minutes. I like to buy frozen already cooked shrimp but it definitely tastes better if you allow for the shrimp to thaw before hand. (This way they don't get too tough)

Add pre-cooked shrimp, red pepper flakes and oregano. Allow to simmer in faux butter and garlic for about 3 minutes and remove with tongs.

Add zucchini noodles to the pan, along with the lemon juice and dash of cayenne (and pepper). Simmer for 5-7 minutes so the noodles soak up the juices. Add the shrimp again, mix and serve! Very easy and not a lot of mess. It look about 15 minutes to make all together.

I love ended the day with a hot meal.
